Middle is a dessert looter, a real pie-rate, so this day is right up his alley....
January 23: National Pie Day
National Pie Day was started by a nuclear engineer from Boulder, Colorado named Charlie Papazian in the 1970s. He declared that his birthday should also be known as National Pie Day and, luckily for us, no one disagreed. In 1986, the American Pie Council jumped on board and began sponsoring the day.
Middle and I decided to make a banana cream pie completely from scratch. We found our recipe here and its most definitely one I'll be saving for future occasions. It was a little more labor intensive than our typical endeavors, so we actually started the pie after we finished up our blondies and finished the next day. For an adult without a toddler being hands on, this recipe won't take that long.
First up, we had to make our graham cracker crust. Just like with the blondies, Middle happily helped with melting our butter. Next he dumped our graham cracker crumbs and sugar into our mixing bowl. Once the butter was ready, he helped mix everything together and spread it out into our pie pan.
Momma popped our crust into the oven and Middle bounced off to eat his freshly baked brownies with Papa. The next portion of the recipe is making the vanilla pudding pie filling. It's a lot of whisking/stirring over the burner so despite his eagerness to help Momma, it was safer for him to just observe from the side. By the time I was finished, my arm was definitely tired, but that vanilla pudding was amazing!
We lined our pie crust with banana slices and then topped it with the pudding. Then it was into the fridge to chill. The recipe only requires 4 hours, but we left it in overnight so we could finish the next day.
Once we were ready to finish our pie, we put our mixing bowl and beaters in the freezer for 20 minutes prior to starting. Then we added our heavy whipping cream, vanilla extract, and powered sugar to our chilled bowl. Middle is not a fan of the mixer, so I whipped our ingredients together and he rejoined me when it was time to top our pie. Of course, he had to taste the finished product before I could put it on.
Not to be left out, Little also got a little taste test...
A seal of approval from both boys. We topped our pie with more banana slices and some graham cracker crumbs. 😋 Ain't she a beaut!
